Chef Hawley may be northern Michigan’s most underappreciated culinary talents, perhaps due to Northport’s location way out there on the tip of the Leelanau Peninsula. He’s a CIA grad with a modern, no-nonsense approach to American cooking. Expect some stock making tips, and ideas on how to slow-roast vegetables and meats to develop richer flavors in your soups. Think squash and ginger, wild mushroom and shallots, even miso and turnip and thyme; these are some of the flavors you crave in the Autumn.
