Chef Simon Pesusich serves as Executive Chef of the ten very fine restaurants that are part of Mainstreet Ventures including Gratzi and The Chop House in Ann Arbor and Grand Rapids. A native of Croatia with apprenticeships in Switzerland and Austria, Chef Pesusich crossed to the Americas to take a position as Assistant Chef of the Royal Canadian Yacht Club. In this demo based on recipes from his book Mainstreet Ventures Distinctive Recipes from Distinctive Eateries, Pesusich will prepare Carpaccio of Beef with Dijon Mustard Aioli, Fileto Di Manzo, and Saltimbocca Di Vitello Alla Romano.
